Cathleen Connole opened a fine food and wine shop on Corkscrew Hill, just outside the town of Ballyvaughan in Co Clare in 1999, and is dedicated to promoting the regions foods and the region itself as a premier destination for sustainable tourism.
Her son John came into the business with her and he set about creating the first gin from Co Clare and the idea for Pinnacle Burren Gin was born.

‘My customers kept asking me for a Burren Gin and there was none available, so I decided to change that, using as much of the village of Ballyvaughan as I could in the process’
Firstly, Pinnacle is a well in the village of Ballyvaughan. John spent the first six months of lockdown collecting botanicals from in and around the seaside town and creating different recipes to see what flavours would work best. He enlisted local artist Manus Walsh from the town to work on the artwork for the bottle and so the project came together by middle of 2021. Pinnacle Burren Gin is now sold in most of the local bars, and in the family shop in Ballyvaughan, and we are delighted to support the Connoles by announcing that it will also now be available permanently at WineOnline.ie
