Originally created in 1927, VSOP evolved into the VSOP Mature Cask Finish Cognac in 2012: A new finishing procedure of this Grande Champagne, Petite Champagne cognac allows a smoother palate. 20% of the Fine Champagne eaux-de-vie get aged for another 20 years. This cognac finishes in old barrels for a year before bottling.
