Les Hauts de Milly is owned and operated by husband-and-wife duo Didier Defaix and Hélène Jaeger-Defaix, whose vineyards in Rully and Chablis have been in their respective families for generations. Their winery and cellar are in the small village of Milly, on the left bank of the Serein.

The grapes for the Bourgogne Blanc are purchased from vineyards in the Côte d’Auxerre. The soils here are comprised of chalky clay, which lends the wine a fresher, racier style than Bourgogne Chardonnay sourced from further south in the Côte d’Or. Like the Chablis, it is fermented in stainless steel and aged for 10 months on its fine lees before bottling.

Tasting Note:
The Bourgogne Chardonnay has aromas of cut limes and grapefruit. These concentrated flavours of citrus fruit carry through to the palate, which is well-structured with fresh acidity.
