Château de Tracy has been owned by the d’Assay family for 600 years. The Domaine consists of 33ha on the slopes around the Chateau. The estate is managed by Juliette d’Assay, who likes to show the best of the Sauvignon Blanc with the influence of the unique soils of the area.
It is rich, textured and just perfect for starters on Christmas Day. Very intense herbaceous aroma with mango and passionfruit. A rich, well-balanced wine with ripe lemony flavours along with exotic fruit flavours. A long, structured finish leaves lingering flavours of lime and grapefruit.

4. Chateau Teyssier Saint Emilion Grand Cru – The Starter Red
A classic Bordeaux, with Merlot accounting for most of the blend. As a result, the wine is soft, velvet smooth and lengthy in flavour. It is made for food and the 30% Cabernet Sauvignon gives it sublime structure. A château whose vineyards and winemaking has been hugely upgraded under owner Jonathan Maltus since he acquired the property in 1994. Planted with 70% Merlot and 30% Cabernet Franc, meticulous grape selection and minimal handling is employed during the winemaking and the wine is aged for about 12 months in a mixture of new and used French oak barrels. A wine that has a deep colour, fresh fruit expression and good length and balance.
5. Chateau Beychevelle Brulieres Haut Medoc – The Main course Red
The third wine from Chateau Beychevelle, this is a Cabernet Sauvignon dominant blend with seductivity to blow your mind. A sublime Bordeaux for Christmas Day. The vineyard is in the Haut-Médoc appellation and has been managed organically since 2008. Brulières' blend consists of just two grape varieties: Cabernet Sauvignon and Merlot. It is produced with the same level of care as Château Beychevelle and Amiral de Beychevelle.
6. Taylors LBV 2013 – The Cheeseboard
Late Bottled Vintage, or LBV, is the most popular premium Port style in Ireland. What better way to finish Christmas dinner than a glass of Port, with it's inviting aromas or raisin, cherry and vanilla.
Vintage Port and LBV both present a selection of very fine full bodied red ports from a single year. Late Bottled Vintage, remains in wood between four and six years. During this relatively long period of wood ageing, an LBV matures and settles down - it is ready to drink when bottled, does not need to be decanted and can be served by the glass for several weeks after the cork is drawn.
Deep ruby in colour. Intense notes of plum and black cherry are pronounced on the nose, along with chocolatey notes and hints of cedar and pepper spices from maturation in oak vats. This is a smooth, rich wine with structured tannins, balanced acidity and a long finish.
