The Aperitif
Start the day as you mean to go on. We chose champagne Jean Pol Hautbois because of it's really fine mousse. This leads to a lightly toasty nose with great freshness and floral notes.
Champagne Jean Pol Hautbois Brut expresses all that the Cote des Bar terroir has to offer. It is grown on the Southern exposure and ancient soils of the Champagne region, On the palate it is pleasingly crunchy with an elegant and long-lasting flavour, a wine with much breed and finesse. It is a Domaine bottled Champagne, often referred to as a ‘grower champagne’ so the family have control over the production right to the end and the quality is excellent.

The Starter White
For starter's you'll want a wine that is rich and creamy, much like starters on Christmas day. Whether you tend to have soup, chowder, seafood in the form of smoked salmon or prawns, or even pate, the weight of your wine should match that of your food. We have chosen to include the most famous Sauvignon Blanc in the world, that of Sancerre from the Loire Valley. Alain Gueneau is a relatively small producer and he and his family harvest the grapes for this wine on the gentle sloping banks of the Loire River. It is a wine that is lovely on it's own, but it comes alive with the right food.

The Main Course White
When choosing a white wine for the Christmas Day Chairman's Wine Box we wanted a wine that would impress at every level, we wanted a wine that will work sumptuously with the food and support the full flavours of a Christmas Dinner. We tasted many wines and the general consensus of our team was that this white Burgundy, was nicer than any Chablis or Chablis Premier Cru that we tasted alongside it. The best general Burgundy wines can be better than Cru wines like Chablis or even Chablis 1er Cru. This is elegant and wonderfully structured, with delicious minerality. You'll love this we hope. 

Bodegas Navajas Gran Reserva 
Haro Rioja, Spain

The Starter Red
A spectacular Gran Reserva from our favourite Bodegas in all of Rioja. A small family run winery in the heart of Rioja, making the most wonderful wines. This is aged in new American Oak for 24 months and finished in French oak for a delicate and subtle balance of flavours. Have it with cheese and crackers and it will pair beautifully. 

Chateau La Fleur Cravignac
Saint Emilion Grand Cru, France

The Main Course Red
A family property, just one kilometer from the small medieval city of Saint-Emilion. It covers just under eight hectares of vines grown on clay and limestone soils characteristic of Saint-Emilion. Its vineyards are composed 80% Merlot, 15% Cabernet Franc, 5% Cabernet Sauvignon. We import the wine directly from Jean Colbert and his wife Karine from the property. It is quite simply the best Saint Emilion Grand Cru we have come across in the last 6 years of tasting wines there. It is a small property with an output of less than 3,000 bottles and the quality is exceptional. We hope you love this wine as much as we do.

The Cheeseboard Wine
Taylors Fine Tawny Port is incredibly versatile. It can be chilled to bring freshness. This makes it perfect as an aperitif. However, it is most widely known for its smooth and mellow character derived from the hand selected wines that are chosen for this blend. It is a pale brick colour with aromas of butterscotch, figs and prunes, interwoven with attractive nutty and spicy aromas. Smooth and round on the palate, full of rich strawberry jam flavours. Enjoy this with the Cheeseboard on Christmas Day. It will keep for well over two weeks once opened, so can be enjoyed throughout the whole festive season.
