Description:
Mas Candí is the project of Ramon Jané and friends in the hills above Sant Sadurní d'Anoia in the Penedès. The vineyards are farmed organically and biodynamically, and the winery is a member of Corpinnat, the group of growers who left the Cava DO to champion estate-grown, hand-harvested sparkling wine from the heart of the Penedès.

Desig is made from old bush vines of Xarel·lo, over 50 years old, on a limestone ridge at around 300 metres where cool winds lengthen the growing season. The grapes get 24 hours of skin contact, ferment with native yeasts in stainless steel and then rest for seven months on fine lees.

Tasting Notes:
Fresh and vibrant, with citrus, lemon and green apple on the nose. The palate is elegant and balanced, with lees texture and a clean, saline finish.

Food Pairing:
Grilled fish, seafood rice, salads and fresh goat's cheese.
