Vermentino is one of the few white grapes that have adapted perfectly to the climate of the Mediterranean Toscana. It loves the sea breeze and sunlight, and returns a savouriness and right acidity that result in an irresistible freshness. By pressing, different fractions of juice are obtained, each of which is cooled in order to promote natural settling. The clear must is then poured into stainless steel tanks where alcoholic fermentation takes place at low temperatures to maintain its typical freshness and floral notes.
Tasting Note: Fruity and rounded yet dry, the mouth a savoury peach, the nose a waft of jasmine and lovely, racy minerality on the finish.
Food Suggestion: Pair it with oysters, grilled octopus, prawn linguine, pesto pasta, or goat cheese. It excels with lemon, herbs, and garlic.
