Finding a Prosecco producer with a Liberty Wines profile - control of grapes, a quality ethos, one of the best producers in the zone and a wine that offers value for money - had proved almost impossible. We eventually came to the conclusion that the only solution was to make our own, with the goal of producing a real Prosecco - clean, fresh, soft, frothing, uncomplicated, gulpable and, above all, affordable. We've been making these wines together with Conegliano-born Andrea Morlin since 1994. Matt Thomson works with Andrea and a grower friend in a modern, compact winery tucked into the hills of this beautiful region. The wines are drier than many Prosecco as we have full control of the grapes, so can pick them when ripe and thus do not have to mask any errors in either the vineyard or the winery with lashings of residual sugar. The Frizzante has lovely definition and aromatic life, while the Spumante is surprisingly persistent and nicely defined.

The vineyards in which the grapes for this wine grow are located in Grave de Piave (Treviso) region and are planted at a density of 2,000 vines per hectare. The grapes were hand picked in the last week of October.
"The free run juice was macerated at 8-10 °C for 4-8 hours to extract a light coral pink colour. The grapes were pressed and first fermented in stainless steel tanks at 16°C. The Charmat method was used at 12°C and the second fermentation took place in tank over at least one month. Bottling and microfiltration took place at 8°C.
The Rosato Spumante is made solely from lightly crushed Raboso grapes, macerated briefly to extract a coral pink colour."
This fully sparkling spumante is a brilliant coral pink colour. It is soft and fragrant, with perfumes of strawberries and a long lasting mousse.
