Almonacid de la Sierra, in Aragón’s Cariñena region, has crafted wine since Roman times and is the home of Garnacha. Its limestone soils, cool Cierzo wind, and wide temperature swings give Garnacha freshness and balance. Garnacha is now grown in many regions from across Spain, to Southern France and Sardinia. But the holistic home for the variety is in Aragón. Today, organic vineyards combine heritage with sustainability, producing pure, vibrant wines — the perfect home for BOTA BOTA Organic Garnacha.
This Garnacha comes from old vines, all dry-farmed on widely-spaced bush vines whose long roots dig deep into the soil, picking up essential minerals and nutrients.
The grapes are destemmed but left whole-berry (not crushed). Fermentation is initiated spontaneously by native yeasts in stainless steel tanks. Approximately halfway through primary fermentation, the must is separated from the skins and seeds and gently pressed. The resulting juice finishes fermentation in the tank, minimizing further phenolic extraction, which results in a fresh, light red style. The finished wine is racked a few times to clarify naturally before preparation for bottling.
Tasting Note:
Found in the unique area of Almonacid de la Sierra, vibrant raspberry and wild strawberry characters come through on the nose and palate. These are coupled with the crunchy and energetic cranberry notes that give this wine so much vitality and drinkability.
Food Pairing: The tannins are supple and silky soft making them ideally suited for casual occasions and pairing with Mediterranean dishes such as roasted vegetables, mezze or simply… pizza.
