Description:
Bodegas Binario is run by the Serrano family, who have farmed their vines since 1998 and are now led by a new generation working with winemaker Ruth de Andrés. Their 70-plus hectares sit between the Calahorra and Andosilla ranges and are certified biodynamic, dry farmed and hand picked at night to keep the fruit fresh.

The Tinto is fermented with native yeasts, with around 15% of the fruit made by carbonic maceration, then rests for five months on its fine lees. Nothing is added other than a little sulphur, in line with Demeter guidelines.

Tasting Notes:
Dark ruby. Brooding raspberry, almost framboise-like, with dried sour cherry and black cherry, then hints of dried fig, violet and tobacco. Classic Tempranillo tannins, rustic but balanced.

Food Pairing:
Grilled lamb chops, chorizo, roast pork and hard cheeses.
