Description:
Pastora was the first Manzanilla ever to appear on the market in bottle, in 1827, at a time when Manzanilla was mostly sold directly from the barrel in bars. The old brand, once called Divina Pastora, was recently revived by Bodegas Barbadillo.

It is a true Manzanilla Pasada, rooted in the solera system. The wine spends six years in the Solear solera before a selection of barrels moves a short way down the road to the bodega La Pastora for a further three years, so it is around nine years old when bottled en rama, with minimal filtration.

Tasting Notes:
Intense and briny on the nose, with green apple, punchy yeast, hay and butter, opening to yellow apple and chamomile. Smooth on entry and growing in complexity, with saline and savoury notes, herbal bitterness, toasted hazelnuts and a long, salty, warming finish.

Food Pairing:
Olives, almonds, jamón, fried fish, prawns and shellfish.
