Description: La Cepa de Pelayo is an organic producer with a history that goes back 3 family generations, where their extensive knowledge and use of tradition has led to their focus on responsible viticulture and winemaking. They work in a natural way following biodynamic practices to ensure wines are made without impacting the environment and by using technology they can create high quality with each vintage. They also benefit from vines that are 35-60 years old which allows them to produce such expressive and concentrated wines.
Tasting Note:
Pale yellow wine with greenish reflections perfectly clean and bright. Aromatic with clear varietal notes in the form of citrus (lemon, grapefruit), white flowers (orange blossom and jasmine) and a background of freshly cut grass. The palate is fresh and bright with citrus acidity and ripe white fruit (apple and pear) with hints of bakery. Very pleasant with a good persistence and length, and the marked acidity to compliment the characters from lees ageing. Minerality and salinity on the finish.
Food Matches: This pairs well with seafood and vegetable risotto.
