Baoilleach, 'An Dara' Cask Strength Irish Whiskey
Michael O'Boyle has been rightly getting plaudits in the Irish spirit drinking community for his small batch releases of whiskey, poitín, gin and rum. His mission is "Craft & Quality, Small Pot - Big Flavours"
One of the smallest distilleries in Ireland, Baoilleach Distillery takes pride in producing high-quality handcrafted spirits that capture the spirit of Donegal and its illustrious distilling history. They use a direct fire and a small copper still, all manually operated, in producing a batch. There are between 250 and 350 bottles in a batch, and each batch requires several spirit distillations.
The second whiskey release from Baoilleach, 'An Dara' Cask Strength is a vatting of Irish Whiskies from three casks, a light peated mixed mash bill in bourbon quarter cask, unpeated Mixed Mash bill in a Oloroso butt and a heavily peated Single Malt in a Oloroso Hogshead. Bottled at 56.9%, this second whiskey release from Baoilleach is limited to 120 bottles.
