Michael O'Boyle has been rightly getting plaudits in the Irish spirit drinking community for his small batch releases of whiskey, poitín, gin and rum. His mission is "Craft & Quality, Small Pot - Big Flavours"

One of the smallest distilleries in Ireland, Baoilleach Distillery takes pride in producing high-quality handcrafted spirits that capture the spirit of Donegal and its illustrious distilling history. They use a direct fire and a small copper still, all manually operated, in producing a batch. There are between 250 and 350 bottles in a batch, and each batch requires several spirit distillations.

The second whiskey release from Baoilleach, 'An Dara' Cask Strength is a vatting of Irish Whiskies from three casks, a light peated mixed mash bill in bourbon quarter cask, unpeated Mixed Mash bill in a Oloroso butt and a heavily peated Single Malt in a Oloroso Hogshead. Bottled at 56.9%, this second whiskey release from Baoilleach is limited to 120 bottles.

Tasting Notes:
Nose: Pronounced nuttiness and rich caramel reminiscent of a Snickers bar, complemented by distinct floral and perfumed top notes.
Palate: Features a spectacular, unique creaminess in its mouthfeel. Robust grist and spirit spices dance alongside a dialled-up intensity of Oloroso sherry and peat smoke
Finish: Long and developing, carrying forward the rich nutty, smoky, and warming spicy profile.
