A Second Red Wine from Saint-Émilion, captivating in its finesse and aromatic expression
The estate
The origins of the estate are very ancient. The vines have been cultivated on the slopes of what is now the Chateau Pavie since the 4th century. Owned by Chantal and Gérard Perse since March 1998, Château Pavie, a 1st Grand Cru Classé "A", possesses one of the most beautiful terroirs of Saint-Émilion. Château Pavie is recognised for the structure and elegance of its wines.
Arômes de Pavie became the label for the second wine of Château Pavie from 2005, succeeding that of Château Tour Simard.
The vineyard
Arômes de Pavie is the Second Wine of this iconic estate in Saint Emilion made from vines averaging 53 years old located southeast of the Saint-Émilion hill. This 13.5-hectare vineyard is planted on the "plateau" composed of a clay-limestone soil above the limestone with asterias. Particular attention is paid to the vineyard: pruning, green harvesting and leaf thinning vary according to the age of the vines.
Vinification and ageing
Hand harvesting with sorting. Vinification in thermoregulated wooden vats. The malolactic fermentation takes place in barrels, as does the ageing, with 50% new barrels and 50% barrels of one wine.
Blend
Arômes de Pavie 2022 is the result of a Merlot (50%) and Cabernet Franc (50%) blend.
94-96 Jeb Dunnuck - The second wine of this terrific château is the 2022 Aromes De Pavie, an even split of Merlot and Cabernet Sauvignon (the same blend as the 2020). It might be the greatest second wine in the vintage, displaying a classic Pavie style in its ripe red and black fruits as well as notes of camphor, chocolate, violets, and graphite. Rich and powerful, with medium to full-bodied richness, it's going to be ideal for drinking on release and over the following 15-20 years
91-93 Wine Advocate - The 2022 Aromes de Pavie is composed of 50% Merlot and 50% Cabernet Franc with a pH of 3.74. Yields were 28 hl/ha. Deep garnet-purple in color, it prances out of the glass with showy scents of juicy black plums, black cherry compote, and kirsch, plus wafts of rose oil, chocolate mint, and tapenade. The full-bodied palate is firm and chewy, packed with black fruit preserves, finishing with a spicy kick.
