Harvesting is all done by hand and with a low yield of 5-6 tonnes of grapes per hectare, to ensure that each vine produces fruit rich in sugar, tannins, and potential extract. Fermentation takes place in stainless steel temperature controlled vats with maceration on the skins lasting for around 12 days for both Cabernet Sauvignon and Sangiovese. The wine is aged for 12 months in French and American oak barriques and refined for three months in bottle before release. A wonderfully harmonious wine which bursts with dark berry and cassis aromas. The palate is rich and expansive with attractive spicy notes. Ripe tannins give structure and depth. This is a very appealing wine with excellent length.
