Description:
Novilunio del Ribeiro is made with 90% Treixadura grapes and 10% Albariño grapes, planted on fresh, permeable, granitic soils. It is hand-harvested, bunch by bunch, and transported to the winery in boxes weighing no more than 15 kg. Fermented with control yeasts and its own starter culture, it is aged and refined in stainless steel tanks. It stands out for its yellow colour, with a clean and bright appearance with golden reflections, and for its medium-intensity layer.

Tasting Note:
Its aroma is intense, complex, and highly varietal, with notes of fresh, ripe fruit such as apple and pear. It is a structured and full-bodied wine on the palate, balanced with a certain smoothness and freshness. It has a good balance of alcohol and acidity, giving it roundness and a certain warmth, and culminates with a long, lingering finish.

Food Matches:
It pairs very well with molluscs and seafood, and is a good companion for light tapas and salads.
