Description:

Farming practices/vinification: certified organic, following biodynamic principles. Pierre always is the last one to harvest in Limoux - sometimes at the end of October: he looks for perfect maturity, and his organically farmed grapes are more resistant to diseases. Everything is hand-harvested. In the cellar, only indigenous yeasts are used. The fermentation can be very long, sometimes 3 to 6 months. Very little sulfite is added: 1gr per hectoliter at pressing, before the fermentation, to avoid bacteria then 1 gr at bottling. Total: 20 to 25 mg sulfite per hectoliter. The wines are not fined and vegan.

Organic culture. A wine of great complexity, a brilliant association of body and freshness on the palate with scents of nuts, white flowers, fresh bread and yeast. Will accompany cod or turbot in morel mushrooms, scallops or crayfish. It will improve over time. Decant and aerate an hour before serving.


Tasting Note:  Wooded melted and aromas of white fruits, citrus and floral notes. The marriage of three varieties gives a great aromatic complexity. Mauzac brings vivacity, Chardonnay and Chenin structure and roundness. Complexity found in the mouth with good persistence. Balanced wine with bold freshness. Wine round and persistent cost supported by good acidity that makes a nice balance.
