Sylvain Pataille is perhaps secretly one of the most important figures in Burgundy today. Beyond being a leader in organic and biodynamic viticulture, he is also a consulting oenologist for some of the most famed domains in the region. 

Jancis Robinson said that 'Sylvain showed exceptional prowess in making Aligoté'. These whites are capable of achieving extraordinary complexity.

Tasting Notes: Aroma is at first subtle but becomes more intense as it opens, without a specific fruit I can describe. Lightly herbal and spicy. With an oily minerality. More herbal and cedary on the palate, with a citrus foundation. Likely to age well, with a slight grip to the texture suggesting it will be a great food wine. Long finish.
