Ingredients:
- 110g brown sugar
- 55g paprika
- 1 tablespoon chilli powder
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 teaspoon ground cumin
- 1/2 teaspoon cayenne pepper (adjust for spice preference)
- 1/2 teaspoon smoked paprika
- 4 whole bone-in, skin-on chicken thighs
Method:
- Make the BBQ rub: In a small bowl, whisk together brown sugar, paprika, chilli powder, garlic powder, onion powder, cumin, cayenne pepper, and smoked paprika.
- Prepare the chicken: Pat the chicken thighs dry with paper towels. Season generously with salt and pepper. Rub the BBQ rub evenly all over the chicken, coating the skin and flesh.
- Preheat the BBQ: Preheat your grill to medium heat (around 180°C). If using a gas grill, preheat for 10-15 minutes with the lid closed to allow for smoke to develop.
- Grill the chicken: Place the chicken on the grill, skin-side down. Grill for 20-25 minutes, or until the skin is golden brown and crispy. Flip the chicken and continue grilling for another 10-15 minutes, or until the internal temperature reaches 74°C in the thickest part of the thigh.
- Serve: Serve the grilled chicken with your favourite BBQ sauce and a side of creamy coleslaw.
