Perez Barquero, Fresquito, Vino de Tinaja - Montilla-Moriles, Spain
Hailing from the ancient, yet often overlooked, Montilla-Moriles region, this isn't your average white wine. It is absolutely fascinating. Crafted from 100% Pedro Ximénez grapes, it undergoes a fascinating transformation. After fermentation with native yeasts, the wine rests for around nine months in traditional clay jars, called tinajas, developing unique character and complexity. The result? A vibrant and intensely aromatic wine, bursting with intriguing notes of herbs and dried fruit. Don't let the intensity fool you – the Fresquito boasts incredible freshness, a supple, almost silky mouthfeel, and a satisfyingly long finish. It's a true taste of Montilla-Moriles tradition, bottled and ready to be discovered. Enjoy with blue cheese or goats cheese and pear salad.
