Made in true Wildeberg fashion, with minimal intervention at all stages in order to capture the natural site-specific energy of this unique fruit. Fermentation takes place in oak and then matured on gross less for 10 months in 60% Austrian and 40% French oak barrels, with 20% new oak
Tasting Note:
The very definition of poise and balance. On the palate is delicate notes of citrus and young stone fruit, with fresh tropical notes as it opens. Beautifully integrated oak that
provides texture, as well as hints of spice and flinty minerality, along with wonderful, subtle toasty notes.
Food Matches: Very versatile for matching, white fish with beurre blanc or roasted squash with herby ricotta would fit the bill nicely.
