The vines for Les Caillottes are at least 30 years old. With minimal influence in winemaking, nature gets to decide the result. Pascal Jolivet Sancerre Les Caillottes 2021 is made with exclusive natural yeast strains in temperature-controlled stainless steel tanks. All vineyard locations are vinified separately to ensure quality before blending and bottling. The wine is incredibly lively, fresh, full-bodied with clear notes of citrus, lime peel and peach and mineral which makes the wine the perfect alternative to oysters and the delights of the sea.
