The Roussanne comes from the Montélimar area in the Southern Rhone . It’s a noble varietal which produces high quality and complex delicate wines. Pure, she offers a wine of an undeniable finesse. This is why we challenged ourselves into producing the Égerie cuvee.
EXPOSURE :
Two terroirs perfectly combine in this cuvee : - the first, on a limestone subsoil plateau, covered by rolled pebble stones from the Rhône’s tributary. A draining soil, providing coolness and minerality to the wine.
- the second, on the Rhône’s screes, is denser, which gives a richness and volume to the wine.WINE GROWING PROCESS :
The provision in organic fertilizer is strictly reserved to the plot of land concerned, and is done in a respectful ground/plant harmony. Tillage and grass covering are done one row out of two. Manual work on growing vines. High trellising (3 or 4 wires). Green harvest and leaf thinning depending on the vintage. HVE (High Environmental Value Certification)
We practice night harvest.WINEMAKING PROCESS :
A slight skin maceration (4 hours). Cold-and soft pressing, natural cold release, thermo-controlled fermentation (<18°C), no malolactic fermentation. 3 to 6 months of maturation on fine lees in new wooden barrels(228l) for 50% of this cuvee. Weekly stirring.
MATCHING FOOD AND WINE :
This Roussanne requires noble and sophisticated products such as freshwater fishes in cream . Truffle dishes will perfectly fit with this wine (ravioli's, omelette, eggs...).
Its powerful flavour also allows for bolder pairings with soft spices (curry) or coconut milk-based dishes.
Before dinner, it will liven up the taste buds of all your guests!WINE AGING POTENTIAL :
Very interesting while young, but will benefit from aging over a few years. (5 years)
WINEMAKER'S TASTING
The Égérie wine offers a sophisticated and pure nose from the opening scents. The finesse of the hawthorn’s and honeysuckle’s aroma is completed by a much exotic touch on the second scent – honey, brioche – and a smoky side to complicate the bouquet.
On the mouth, the wine is elegant, both remarkably fine and strong of character. Purity of the fruit, aromatic finesse...
