Domaine de la Borie Blanche Minervois

The Minervois La Livinière is in the heart of Minervois on the highest slopes. Leaning against the steep slopes that surround the Causse, bordered on the west by the Serre d'Oupia, this schistous terroir where Mediterranean influence and freshness of the Causse are combined is truly exceptional. Terroirs d'Altitude are selections of plots that reach 350 meters.

Vinification: Manual harvest. Traditional method. Separated by grape variety. Maceration with very gentle interventions to preserve the finesse of the tannins and the depth of the fruit.

Tasting: Deep garnet red, powerful and complex nose with scents of dried fruit and very ripe cherries, followed by more complex and slightly mineral/spicy notes (cloves, star anis). Generous and smooth in the mouth, very refined tannins, wonderfully spicy finish.
