Steve says that it can be the imperfections that make wine interesting and give it character. He’s a down-to-earth winemaker who also enjoys taking the arrogance out of wine appreciation.
The fruit for this Pinot is sourced from all three of De Bortoli’s Yarra Valley vineyards along with contributions from growers in the Coldstream, Paul’s Creek, Tarrawarra and Beenak sub districts. Approximately 15-25% whole bunches are included in the ferment with maturation taking place in French oak casks for a period of between 6-9 months.
Taste: Deep dark red colour with black tinged edges and a light red hue. Alluring violet, dark cherry, strawberry and anise scents show excellent intensity out of the glass. Subtle forest floor and spicy fresh herb notes ensue. Delicious ripe cherry and strawberry fruits decorate the mouth underpinned by a vibrant freshness. Anise, light forest floor and spicy cedar elements make an appearance on the back half. Polished, well integrated tannins and acidity finishing long and tasty.
