In Avignonesi, the pursuit of excellence goes hand in hand with the experimentation of 100% Tuscan winemaking processes. The intention is to allow the habitat to prevail over external influences. For this particular wine, Avignonesi set aside steel and oak in favor of Tuscan clay. The name Da-Di, a Chinese term for "earth, soil", was chosen to underline this particularity.

The sediment you may find in this wine shows that it is made of pure Sangiovese with minimal intervention. The deposit is due to its high content of a natural antioxidant called quercetin, which is perfectly safe. This is not a defect, it is a characteristic of pure Sangiovese.

Tasting Note : Intense and fascinating aromas, precise and varietal. Notes of cherry, ripe raspberries and currants intertwine with harmonious nuances of rosolio and wild strawberry. Viscous, dense, vibrant and explosive in the mouth. Red fruits return to the palate, morello cherries and black cherries caress the palate accompanied by floral touches. The finish is the highest point of the meeting between freshness and sweetness, a combination that only terracotta wine can offer.

Food Suggestion: Pair this with classic Tuscan dishes such as wild boar ragu, grilled steak and stewed white beans.
