Description:
The terroir is composed of clayey-schist slopes with a limestone base and an altitude varying between 120 and 470 meters. The wine displays a fine nose with notes of wild herbs. Fresh aromas of redcurrant and a powerful kick of kirsch. There is a distinct whiff of rosemary, and a little charred oak, with tight tannins that will get to grips with grilled meat.
Hand-harvested into small crates with a first selection as the bunches are cut, and then a second sorting of grapes at the cellar door. The fermentation is kept between 20-23°C to maximise the fruit expression and the wine is macerated for 4 weeks with both pumping over and pigeages. 60% of the wine is matured in new and one wine oak barrel during 6 months.

The nose shows notes of blackberries, cassis, roasted meat, dark chocolate, dried thyme, bay leaves and baking spices. Full-bodied with creamy tannins. Compact with generous berry character and plenty of spices toward the long and focused finish. Drink or hold."

This awesome Côtes du Roussillon Villages has amplified aromas of squeezed black cherries, with just a touch of prune juice. It is vibrant, sumptuous, honest and delicious, with a wealth of fruit character and hints of cured meat and rusty nail underneath. There is fresh acidity to balance all the concentration and ripeness, bringing about a well-proportioned whole.
