After working in several different wineries, Alvar de Dios decided to start his own personal project, demonstrating the value of the old vines owned by his grandfather in the town of El Pego. His clear effort towards an organic-biodynamic cultivation and a classic production, result in fine and tasty wines. Alvar de Dios has managed to position himself amongst the most important winemakers of the area.
Tio Uco is a red wine made from three vineyards located at around 750 metres of altitude, planted on mainly sandy soils. The Garnacha is over 60 years old and the Tempranillo is between 25 and 40 years old.
Harvest is performed by hand. Once the grapes arrive at the winery they are stomped. They are fermented with native yeasts at a controlled temperature. The ageing is carried out in foudres and large barrels for 5 months. This wine is bottled without clarifying or filtering.
Tasting Notes:
Bright ruby in colour, the nose is full of red fruits and complemented by complex nuances of balsamic and spice. The palate is well rounded, full of juicy red fruits and balanced with an excellent acidity.
