The House of Chapoutier has a long and proud family tradition dating back to 1808. Today, seven generations later, Michel Chapoutier, the dynamic winemaker, carries on this tradition using biodynamic winemaking techniques to make outstanding wines which have received wide international acclaim. Michel Chapoutier is often daring combination of old and new techniques and his creative solutions to old problems has transformed winemaking in the region and brought many accolades to both himself and his wines, including much praise from the respected Mr Robert Parker. He has the biggest holding in Hermitage and is also the largest biodynamic producer in France. Chapoutier's commitment to biodynamism is unflinching. The earth (terroir) is a living organism and must be respected and reflected through flavours unique to each parcel and vintage rather than strive for a common style.
The plots for the Domaine de Bila-Haut are located on the slopes of the high Agly Valley, in the Roussillon area of Southern France. They are composed of gneiss and schist from the Devonian Period.
Harvest:
The crop is hand-harvested.
Winemaking:
Entirely destemmed. The extraction is only performed by punching of the cap. The maceration lasts from 2 to 4 weeks according to daily tastings and the wine is aged in vats
Ageing Potential: 4 - 5 years
Tasting Note:
Made from a blend of Syrah, Grenache and Carignan grapes, this is a rich full-bodied wine with a spicy finish.
