Domaine Etienne Sauzet, located in the village of Puligny-Montrachet, is arguably one of Puligny’s finest domaines. Established in the 1920s, at its height the domaine had 12 hectares under vine. Etienne’s daughter inherited the vineyards and left them to her three children so consequently, the vineyard holdings today total less than nine hectares. Until recently Jeanine, Etienne’s granddaughter, and her husband Gérard Boudot, ran the domaine. Today, the next generation has taken over with Emilie, Jeanine’s daughter and Benoît Riffault, her winemaker husband running the domaine. Etienne Sauzet purchases grapes from family and trusted growers and has been practicing biodynamic viticulture for the last eight years. The portion of new oak in the cellar has also been reduced in recent years to allow the elegance of the fruit to shine through.

Vineyards:
All the vines that produce the Bourgogne Blanc Tuféra are in the village of Puligny Montrachet. The soil is a mixture of clay and chalk. The vines face south-east and are pruned in guyot-simple. The average age of the vines is 50 years old, grown on perfect Chardonnay soil in the heart of the Côtes de Beaune. The domaine has been practicing Biodynamic viticulture since 2008 and will be certified in 2015.
Vinification:
The grapes are pressed using a pneumatic press, which is gentle, controlled and minimises the extraction of astringent phenolics. The wine is aged for 12 months in French oak barrels that are one to three years old before spending another six months in stainless steel vats to 'marry' before bottling.
Tasting Notes:
"Magnifique," says Gérard Boudot. Very aromatic, with more white flowers than yellow fruit. The palate has a good balance of acidity and concentrated fruit flavours. A lovely wine, elegant and tasting far above its AOC.
Food Suggestion: Enjoy with shellfish, in particular, langoustines or lobster.
