Castillo del Moro wines are sourced from one of the most advanced bodegas in La Mancha and they combine the traditional varieties of the region with international varieties such as Sauvignon and Syrah. Irish Master of Wine Fergal Tynan owns and produces both of these Castillo del Moro Wines. Both have won International Silver medals at the International Wine Challenge. Fergal oversees the winemaking at Castillo del Moro and is one of only 8 masters of wine to come out of Ireland
The grapes are sourced from a mixture of trellised and bush vines in the Manzanares district of La Mancha- renowned for it's limestone soils. The majority of the grapes are machine harvested at night in order to maintain the acidity and bright, fruit flavours.
Red: Castillo del Moro wines are made entirely from free run juice and fermented in temperature controlled, stainless steel tanks and then matured on fine lees until bottling. The resulting wines show unparalleled freshness and aromatics compared to many similarly priced wines from around the world.
White: The grapes are harvested and bought to the winery were they are graded for quality and flavour profile then gently de-stemmed and crushed to large refrigerated draining tanks. Only the free run juice is used and sent to cold settling tanks where it is cooled and settled to clarify the juice. There is no pressing of any of the grapes used to make these wines to reduce the phenolics and keep the wines soft and fresh. Fermentation takes place using specially selected yeast strains in stainless steel to retain the fruit characters of the grape keeping the wine fresh and zesty. The finished wine is then gently fined using minimal amounts of bentonite to remove protein and then cold stabilised to remove tartrates with minimal filtration and then bottled to retain the fruit characteristic of the grapes. Red: Ruby red colour with violet tints showing its youth. On the nose it is fresh and elegant with characteristic aromas of cherry and red fruits typical of this variety. Light, harmonic and round on the palate with soft tannins.
White: This modern, crisp white demonstrates bright citrus characteristics on the nose, while offering deliciously vibrant apple fruit flavours and a zesty twang courtesy of the Sauvignon Blanc on the palate. A long clean finish with hints of grapefruit.Food Matching
