The "Rocca Antica" farm is situated 300 metres above the sea level, and it covers a surface of about 20 hectares including olive groves and vineyards, all rigorously in organic farming, this respecting the nature and the future.
This area of evocative beauty is about 30 km from the Apennines mountains and 1 km from the Moro river. The geographical location gives the wines and Extra–virgin olive oil an excellent quality.
The "Rocca Antica" farm has been part of the Abruzzo environment–friendly movement in favour of organic farming and natural nutrition.
The Extra-virgin Olive Oil “Rocca Antica” is obtained with cold pressing of a variety of olives produced on the “Rocca Antica” farm - Maiolo, Frantoio, Leccino and Gentile. These last two varieties are originally from the Abruzzo region and are the main varieties that are cultivated in the hills where olive grooves of "Rocca Antica" expand.
The oil production systems in "Rocca Antica" are the same as in the past, only difference is in more modern and efficient machines that have replaced the old and primitive oil presses that give more quality.
Olive-harvesting is still done by hand directly on the trees. The olives are then cleaned and taken to the frantoio where the olives are subsequently pressed. The obtained pulp is then poured into the containers allowing to work it with the press and cold pressed.
The time spent from olive-harvesting to their pressing, is less than 24 hours; at this time the working process foresees a natural separation between, the oil and water that is used for the pressing. This careful and selective work allows, so, to obtain an Extra-Virgin Olive Oil of a yellow-green colour with an aroma of olives and a sweet, balanced on flavour.
