This red is the result of a project that was started by two MWs, Giles and Fergal, who wanted to create wines that were suitable for restaurants, hotels, bars and for use at home. No small task, but one with which they set about armed to the teeth, full of enthusiasm. In the south of the Languedoc they found a number of parcels of Carignan that looked overgrown and unloved. With their care and attention they have made a wine that fits their purpose - it is fresh with natural acidity making it excellent for food matching, and it has ripe fruit flavours that are ideal for sipping the wine in more informal settings.Producer Profile

Although this wine is made with an old traditional grape variety, the vinification was carried out in a modern style. The grapes are destemmed and crushed. The fermentation is carried out at controlled temperature, around 23°C . The ageing is carried out in tanks with a small amount of French oak staves to add more complexity and roundness to the blend.
