In the appassimento technique, the grapes are partially dried for several weeks in specially designed drying rooms immediately after picking. The grapes are then gently masticated and fermented, and finally pressed. The result is a very full-bodied, complex and sweet wine, which has both the fruity character of the grapes and a "bold", velvety style, which is very reminiscent of Amarone.
Missetti is composed of selected red grapes from different regions of origin and is made according to the "appassimento" technique in Veneto. Both fermentation and maturation take place in temperature-regulated stainless steel tanks, and the wine therefore experiences the delicate, sweet, aromatic nuances that the drying of the grapes gives.
Tasting Note: Sweetly evolved chocolate and spice aromas make way for a lovely open palate of creamy vanilla, raspberry and strawberry. These appealing fruit flavours are off-set against a deeply moreish, tangy liquorice edge, serious dark tannins, and a lively acidity. This is a gorgeously complex red wine.
