It is a vineyard of outstanding value. The Valiñas estate belongs to Mar de Frades and spans 2.2 hectares, where we carry out meticulous winegrowing, paying special attention to the health of its well-drained sandstone and granite soils.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eProduction\u003c\/strong\u003e\u003cbr\u003eThe process begins with an extremely selective harvest, designed to preserve as far as possible the qualities of each cluster we pick on this unique estate. The grapes are macerated for 65 hours at 12ºC, without the addition of sulphites, in Ganimede tanks protected by CO2. This method extracts the freshest, most elegant and intense aromas. After fermentation with indigenous yeasts, gentle work with the lees takes place for two years in stainless steel tanks.
