When we started our campaign to permit the use of screwcap on DOCG wines, we didn't think it would take so long.\u003c\/p\u003e\n\u003cp\u003eAs soon as the law changed, we began talking to La Giustiniana about using some of the wine that doesn't make it into the blend for 'Lugarara'. Initially, it had to be declassified to Gavi, but we can now sell the wine as Gavi di Gavi and seal it under screwcap. All vineyards are between 300-500 metres above sea level. Soils are grey marl with loose sandy topsoil. The vines face south\/southeast and are Guyot trained, planted at a density of 4,000 vines per hectare.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eVinification:\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp\u003eThe grapes were gently pressed, then fermented for two weeks in temperature controlled stainless steel tanks at 16 °C.
