Santa Rosalía is a winery in a town called Vizmalo, nestled between Valladolid and Burgos in Northern Spain. Not far at all from Rioja and made in the very same style, it is located about 200kms due south from Bilbao. It is a winery famous for its Wagyu beef as it is, it’s own Organic wine. It’s philosophy is based on animal welfare and respect for nature. Under these premises they elaborate all of their products achieving in them the high quality and healthy characteristics for which they are recognized.
Their philosophy towards working the land is not based on dominating this but on endeavouring to integrate the use of respectful agriculture into the natural environment of their winery's ecosystem.

The ecological agricultural practices are backed by the quality of the resulting wines and this is overseen by the Ecological Regulating Council of Castile-Leon.
In this case, the maceration lasts ten days. Next, the malolactic fermentation takes place in an 80 percent stainless steel tank and 20 percent casks. Afterwards, it stays in barriicas of French and American oak for 16 months. Then, aging in bottle for a year. In the end, the wine has deep fruits and sensations of vanilla, red fruit and licorice.
