Fattoria Il Lago is a Tuscan winery and olive oil producing country estate, situated just outside of Florence near the small town of Docomano. The estate belonged to the noble Florentine family of Bartolini-Vivai-Salimbeni hundreds of year ago, then in 1962 the farm was purchased by the Spagnoli family who began the slow process of restoring many dilapidated buildings and overhauling the vineyards and replanting the Sangiovese grape vines.
As with all of their wines, harvesting is carried out by hand from 25 year old vineyards at 350 metres above sea level on rich clay soils that provide plenty of water retention. Vines are trained and pruned Cordone Speranato and average yields of 50 quintals (5000kg) per hectare.
The maceration process takes place in stainless-steel vats and is then periodically punched down so as to obtain a higher extraction of the colour and of scent. During this period of about 20 days the wine terminates its alcoholic fermentation at a temperature of approximatetely 28°. The wine is subsequently in part placed in new French “barriques” (Allier and Troncasse) and the other part is placed in second-hand used “barriques” for a duration of eighteen months.

Ruby red with pale garnet shades. Ample ripe fruit, preserve and cherry notes. Dry with structure and presence yet still quite delicate and well balanced. The end is persistent and harmonic.
