Mad Fish Shiraz

The expression of Shiraz from the temperate Margaret River region combines the ripeness and opulence of warmer climates with the spice and elegance typical of cooler ones. The primary fruit characters are spice, cinnamon, raspberry, dark cherry, mulberry, blackberry, black pepper, plum and chocolate. Secondary characters are mocha, coffee, prune, meaty, savoury and leather.
The Stump Jump Riesling

Riesling gives the finesse and class to this wine, Sauvignon Blanc adds loads of aromatics, and the Marsanne and Roussanne provide complexity, weight and nuttiness to the palate.
The resulting wine is an exotic mix of citrus, stone fruits, passionfruit, guava and tinned pineapple which develops into a long savoury, nutty like finish.
The mouthfeel is rich and luscious without being overly oily, kept in check by a fine line of mineral acidity.

This Chardonnay depicts the Cape Barren Goose, a symbol of an endangered species. Over the years, many birds and animals have sought and found refuge in Yalumba’s sanctuary, land dedicated to native wildlife rehabilitation. Fermentation by natural or ‘wild’ yeast, naturally present in the vineyard has helped shape this wine; think minerality, grapefruit and pineapple flavours.
