The south\/south-west facing vineyards are situated approximately 150-200m above sea level. Environmental factors such as the protection from storms offered by the estate‘s geography, evenly distributed rainfall, cool summer nights and constant ventilation act as natural deterrents against pests and plant diseases.  This allows Capezzana to practise an eco-friendly form of farming where grapes and olives are produced with no use of pesticides. Other sustainable farming practices at Capezzana include the exclusive use of organic fertilisers and a technique known as \"sovescio\" (ploughing under legume and cereal crops grown between the vines‘ rows).\u003c\/p\u003e\n\u003c\/div\u003e\n\u003cdiv class=\"item\"\u003e\n\u003cp\u003e\u003cstrong\u003eVinification:\u003c\/strong\u003e\u003cbr\u003eThe grapes were hand-picked from the end of September to the beginning of October.  The fermentation lasted seven days and took place in temperature-controlled stainless steel tanks. Temperatures did not exceed 27ºC during fermentation. After two weeks of maceration, the wine was transferred into barriques, where malolactic fermentation was completed within a month. Fermentation lasted seven days in temperature controlled, stainless-steel vats followed by a seven day maceration. It’s not a deep, impenetrable colour, it’s almost translucent and comes across as quite delicate in character, as per the ‘house style’ at Tenuta di Carleone, but the tannins are like cashmere and the aromas and flavours are wonderfully authentic Sangiovese without being ostentatious. Don’t mistake it for a fragile Chianti, just because it isn’t impenetrably dark, it doesn’t want for concentration, it’s just light on its feet. 13.5% alc. The ‘Barco Reale’ blends Sangiovese, Cabernet Sauvignon and Canaiolo from the estate’s younger vines. It is rounded and ripe with a great balance between fruit and structure. The ‘Villa di Capezzana’ Carmignano, a blend of 80% Sangiovese and 20% Cabernet Sauvignon aged for 12 months in French oak, is beautifully intense and elegant. ‘Ghiaie della Furba’ is a Bordeaux-inspired blend of Cabernet Franc, Cabernet Sauvignon, Merlot and Syrah from a plot planted on gravelly soils (Ghiaie) near the Furba stream that runs through the estate. Aged for 18 months in French oak barriques, it has wonderful depth of flavour and marries crunchy red berry fruit with a subtle spiciness.
