The majority of fruit for this wine is sourced from the premium regions of the Barossa and Eden Valley’s in South Australia. The Barossa experienced a cool, dry winter with below average rainfall which was further compounded by extremely windy conditions leading to some poor fruit set and smaller berry size. The resulting low crops and small berries ripened perfectly however giving rich, concentrated flavours and excellent acid retention. This classic blend is made up of 92% Semillon and 8% Sauvignon Blanc.
The grapes were picked using a combination of hand (20%) and machine (80%) harvesting. The hand harvested fruit was whole bunched pressed, while the machine harvested fruit was destemmed without crushing (Semillon) or crushed (Sauvignon Blanc) to expand flavour intensity. Fermentation occurred in stainless steel tanks at approximately 10 degrees over a period of 21 days. 12% of the Semillon was fermented in old French oak to increase complexity. The wine was then matured on yeast lees until blending and bottling.
Ageing Potential: Developing with age - 6 + years
This popular blended style of Semillon (66%) and Sauvignon Blanc (34%) has a bright lemon green colour with vibrant, fresh aromas of lemon and lime. The palate is zesty and crisp with a citrus, lemon curd and passionfruit fruit base all perfectly interwoven with herbaceous notes from the Sauvignon Blanc. The clean refreshing finish makes it well suited to spicy Asian and simple seafood dishes.
