They have a small domaine in the commune of Fleys, just south of Chablis itself, with 18 hectares of vineyard divided into 13.35 hectares of Chablis and tiny holdings of Premier Crus: Vaucoupin (1.45 hectares), Fourchaume (0.75 hectares) and Les Fourneaux (1.60 hectares). The average age of the vines is 25 years, although Corinne’s steeply sloping Vaucoupin vines were planted back in 1962.\u003c\/p\u003e\n\u003cp\u003e\u003cbr\u003e\u003c\/p\u003e\n\u003cmeta charset=\"utf-8\"\u003e\n\u003cdiv class=\"item\"\u003e\n\u003ch4 class=\"h4\"\u003eVineyards\u003c\/h4\u003e\n\u003cp\u003eThe Perchaud Chablis vines are mainly located in the village of Fleys. The steep, north to northwest facing vineyards have a surface area of 18 hectares and the soil is the typical Kimmeridgian soil of Chablis: chalky clay with some marl. The double Guyot trained vines are 25 years old on average. Corinne and Jean-Pierre avoid using chemical pesticides, choosing sustainable methods which are better for the environment and working the soils throughout the year to avoid chemical fertilizers too. Since 2012 the estate has been in conversion to organic certification.\u003c\/p\u003e\n\u003c\/div\u003e\n\u003cdiv class=\"item\"\u003e\n\u003ch4 class=\"h4\"\u003eVintage information\u003c\/h4\u003e\n\u003cp\u003eAt first, the 2016 vintage seemed to be a difficult one with unpredictable weather conditions during the growing period. However, August and September were excellent: blue sky, sunny and dry conditions, light winds and cold nights - all the elements required for a complete and perfect ripening of the Chardonnay berries. This vintage with a cold maturation- which implies neither heat excess nor heaviness during ripening - has developed elegant, aromatic, well balanced and generously mineral wines.\u003c\/p\u003e\n\u003c\/div\u003e\n\u003cdiv class=\"item\"\u003e\n\u003ch4 class=\"h4\"\u003eVinification\u003c\/h4\u003e\n\u003cp\u003eThe grapes were pressed immediately with a Bucher pneumatic press and no skin contact. The must was fermented between 19-23ºC in temperature controlled stainless steel followed by six months on the lees, during which malolactic fermentation took place. The Vinification and maturation of the wine took place in tank, taking around 15 months in total. The juice was then settled and racked into 228 litre French oak barrels, 17% of which were new, the remainder between three and six years old. The wine fermented naturally in barrel to give superb texture and remained on its lees for 10 months. The site elevation is just under 300 metres, but its proximity to dense temperate rainforest makes this site significantly cooler than Sexton and Tarraford. Soils in the Tarraford vineyard are a clay\/loam duplex and contain a fairly solid ironstone content. The root profiles are deep and vertical, which means the vines are accessing material deep into the soil subsurface. The Giant Steps team have a long-standing relationship with the Primavera family, having sourced fruit from the vineyard for some years. The Lusatia Park vineyard was established in 1985 on the Lone Star Creek in the Upper Yarra Valley. Richer on the palate, the Chardonnay is 60% fermented in oak, and half the blend goes through malolactic fermentation. This gives a texture and complexity seldom found in Chardonnay at this price. The Merlot from Colchagua is aged for six months in American oak and has 15% of Cabernet Sauvignon in the blend. Both add complexity to the plummy, exuberant fruit that makes this wine so appealing. Both the Cabernet Sauvignon and the Malbec are also from Colchagua, and display the depth of colour and flavour that this region lends to its red wines.
