Ingredients:
  1. 110g brown sugar
  2. 55g paprika
  3. 1 tablespoon chilli powder
  4. 1 tablespoon garlic powder
  5. 1 tablespoon onion powder
  6. 1 teaspoon ground cumin
  7. 1/2 teaspoon cayenne pepper (adjust for spice preference)
  8. 1/2 teaspoon smoked paprika
  9. 4 whole bone-in, skin-on chicken thighs

Method:

  1. Make the BBQ rub: In a small bowl, whisk together brown sugar, paprika, chilli powder, garlic powder, onion powder, cumin, cayenne pepper, and smoked paprika.
  2. Prepare the chicken: Pat the chicken thighs dry with paper towels. Season generously with salt and pepper. Rub the BBQ rub evenly all over the chicken, coating the skin and flesh.
  3. Preheat the BBQ: Preheat your grill to medium heat (around 180°C). If using a gas grill, preheat for 10-15 minutes with the lid closed to allow for smoke to develop.
  4. Grill the chicken: Place the chicken on the grill, skin-side down. Grill for 20-25 minutes, or until the skin is golden brown and crispy. Flip the chicken and continue grilling for another 10-15 minutes, or until the internal temperature reaches 74°C in the thickest part of the thigh.
  5. Serve: Serve the grilled chicken with your favourite BBQ sauce and a side of creamy coleslaw.
